One Pot Chili in 60

One Pot Chili  


Prep Time: 15 Minutes
Cooking Time: 20 Minutes
Total Time: 35 Minutes
Ingredients:
  • 3 Pounds Diced or Ground Beef
  • 20 Ounces Rotel (Drained)
  • 3 Cups Beef  Broth
  • 1 Medium White Onion (Diced)
  • 5 Garlic Cloves (Pressed) or 2 T Minced Garlic
  • 3 Jalapeno Peppers (Diced) optional
  • 2 TBSP Olive Oil
  • 3 TBSP Chili Powder
  • 2 TBSP Cumin
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 1/2 Teaspoon Cayenne Pepper
  • Cheddar Cheese (Optional)
  • Sour Cream (Optional)
  • Chives or Green Onion (Optional)

  1. Set Crockpot on high.
  2. Add Rotel, Broth, Cayenne Pepper, Chili Powder and Cumin and cover

    Meanwhile:
  3. Dice Vegetables into small chunks.
  4. Saute in a small fry pan: Onion, Jalapeno, and Garlic
  5.  Add the meat and saute until almost browned on the outside. 
  6. Salt and Pepper the meat to taste.
  7. Remove from pan and place it in the Crock pot 
  8. Stir well.
  9. Let crock cook for 1 hour.
    Serve as-is, or with your choice of toppings,
