One Pot Chili

Cooking Time: 20 Minutes
Total Time: 35 Minutes
Ingredients:
- 3 Pounds Diced or Ground Beef
- 20 Ounces Rotel (Drained)
- 3 Cups Beef Broth
- 1 Medium White Onion (Diced)
- 5 Garlic Cloves (Pressed) or 2 T Minced Garlic
- 3 Jalapeno Peppers (Diced) optional
- 2 TBSP Olive Oil
- 3 TBSP Chili Powder
- 2 TBSP Cumin
- 1 Teaspoon Salt
- 1 Teaspoon Pepper
- 1/2 Teaspoon Cayenne Pepper
- Cheddar Cheese (Optional)
- Sour Cream (Optional)
- Chives or Green Onion (Optional)

Instructions:
- Set Crockpot on high.
- Add Rotel, Broth, Cayenne Pepper, Chili Powder and Cumin and cover
Meanwhile: - Dice Vegetables into small chunks.
- Saute in a small fry pan: Onion, Jalapeno, and Garlic
- Add the meat and saute until almost browned on the outside.
- Salt and Pepper the meat to taste.
- Remove from pan and place it in the Crock pot
- Stir well.
- Let crock cook for 1 hour.
Serve as-is, or with your choice of toppings,
