Italian Turkey Meatballs

Portions: 1 Red 1/2 Green
Can you imagine, hot and savory Italian turkey meatballs, all made in the slow cooker. No baking or frying required!
INGREDIENTS:
- 20 oz (1.3 lb) Ground turkey breast 93% lean
- 1/4 cup Whole wheat seasoned breadcrumbs
- 1/4 cup Parmesan cheese, grated
- 1/4 cup Parsley, finely chopped
- 1 Egg
- 1 T Minced garlic
- 1 tsp salt
- 1/2 tsp pepper
Sauce:
- 1 tsp Olive oil
- 2 T minced garlic
- 28 oz can crushed tomatoes
- 1 bay leaf
- Salt and Peper
- 1/8c Italian Seasoning
Directions:
- 1. Combine in a large bowl: ground turkey, breadcrumbs, egg, parsley, garlic and cheese.
- 2. Form 24 small meat balls, about 1/8c in size each.
- 3. To enhance the flavor, I recommend you saute, however - if you're short on time, you can add the Garlic and oil without saute'ing. To saute: In a small saute pan, heat olive oil over medium heat. Add garlic and saute until golden, being careful not to burn.
4. Pour tomatoes into the crock pot with bay leaf, salt, pepper and Italian seasoning.Mix well. Add garlic and oil.
5. Drop meatballs into the sauce, cover and set crock pot to low, 4 to 6 hours. or High for 2hrs
6. When meatballs are ready, serve and enjoy!
Special note: each meatball is approx. 50calories
