Definitely a recipe that is low carb! Before serving, place the Pork loin on a cookie sheet and broil it for a few minutes to brown the bacon. This only takes a couple minutes and ti gives it a wonderful finishing touch, especially if you're a fan of crisp (not soggy) bacon.
