Chopped Tempeh Bowl
Yield: 1 servings
Ingredients:
1 Tbsp Coconut oil, divided
2 Tbsp Red onion, diced
1/2 cup Cauliflower florets, chopped
1/2 cup Broccoli florets, chopped
1/2 cup Red Bell pepper, chopped
4oz Tempeh, cubed
Dash Sea salt
1/4 tsp Garlic powder
2c Mixed salad greens of your choice.
Sauce
1 Tbsp soy sauce (or Aminos)
1 Tbsp water
1 clove garlic, minced
.5 Tbsp lime juice (personally, I skip this, but lime works nicely)
.5 Tbsp oil (Sesame works well)
Dash ground ginger
Directions:
1. In a small bowl, place all ingredients for the sauce and stir to incorporate. Set aside.
2. Place 2 cups greens on your plate and set aside.
3. Heat pan on Medium and add 1/2 of the Coconut oil, once melted, add onion
4. Saute onion for 2 minutes. Add remaining oil
5. Add cauliflower, broccoli and bell pepper; stir for 4-5 minutes or until just beginning to become tender.
6. Add Tempeh and brown on all sides for 2 minutes
7. Pour Sauce into the pan and turn pan off.
8. Remove from pan by placing over the greens mixture.
