Crockpot Pulled Pork
A simple recipe that is quick and easy for summertime when you don't want to cook. Use Pork Tenderloin instead of beef....or use beef for something different. The pork comes out so flavorful and tender that you can easily put this on a bun, use as taco meat, put on your salad or, make a burrito! I typically use it to top my salad, but the point is, you can do SO much with it!You may want to double it so you have extras for the work week!
Serves: 3

Ingredients:
3/4 lb lean pork tenderloin2 tbsp brown sugar (or Stevia)
1 tbsp + 1 tsp low sodium soy sauce
2 1/2 cloves garlic, whole
2 tbsp red onion, diced
1 1/2 tsp ginger
3/4 tsp rice wine vinegar
1 1/2 tsp sesame seeds (Optional)
Directions
- Combine the sugar, soy sauce, red onion, ginger, rice vinegar, sesame seeds in a small bowl.
- Add the pork and garlic to the crock pot and cover with the sauce.
- Cook for 6-8 hours on low.
- Shred the pork before serving.
- For a thicker sauce, leave the lid off after you have the pork shredded for an additional 30 minutes.
