Pork Gyros
Portions: 1 C. filling and veggies + 1/2 pita :1 Yellow, 1 Red, 1 green
Ingredients:
1.5 lbs. Pork Loin.
3 cloves minced garlic
1 tbsp. dried parsley
1 tsp. black pepper
1 tsp. salt
1/2 cup vegetable or chicken broth
1 red onion, thinly sliced
1 tbsp. lemon juice
4 tbsp. oil of your choice (olive, coconut, avocado, etc)
Optional:
Pitas or Naan bread, or Flat Out pitas (I love the Flat Out pitas the best!)
Topping Ideas:
Sliced carrots, onions, green peppers, mushrooms, cucumbers, spinach or lettuce.
Directions:
1. Place frying pan on med-high and spray with Pam/ cooking spray
2. With Meat that is room temperature, place Pork loin, garlic and onion in the pan. Sear the meat.
3. Once brown, place in the crock pot and add 1 tsp apple cider vinegar
4. Pour lemon juice and broth over the meat. Give the meat a quick stir, then place the lid on the crock pot.
5. Cook on high for 5 hours (or low for 8 hours).
6. Before serving, slice pork loin into thin strips.
Serve on Pitas or other bread. To help keep the bread from getting soggy, place lettuce first, then add meat.
