Don't let the size of the ingredients list detour you from trying this one out. Sure, it has a few veggies that are starchy, and a few that are greens. Overall though, I know you will love it. Most grocery stores near me have the veggies already cut up and ready to go (think cauliflower rice)

Ingredients
1 can (14 oz) light milk (your choice: coconut, skim, unsw. almond, etc)
¼ c flour (your choice: all purpose, almond, etc)
2½ Tbsp mild Indian curry paste (or make your own: click here)
½ tsp salt
1 lb of mini/baby potatoes
2 med onions, chopped
1 bag (8 oz) cauliflower rice or cut yours into florets
1 lg red or green bell pepper, quartered and cut into ¾" wide strips
8 oz canned/frozen or fresh green beans
1 c frozen peas
½ c chopped cilantro - torn cilantro leaves (garnish)
Red bell pepper, finely chopped (garnish)
Sliced almonds, toasted (garnish)
Directions:
1. WHISK coconut milk, flour, curry paste, and salt until smooth in a 4 quart or larger slow cooker.
2. ADD potatoes, onions, cauliflower, and pepper and mix together.
3. PLACE Place beans on top.
4. COVER and cook on low 6 to 8 hours or until vegetables are tender.
5. STIR in peas and cilantro.
6. SERVE over basmati rice. Garnish with cilantro, pepper, and almonds, if desired.
