Sherry's Hotdish



Turkey Hotdish

Portions: 1 Red, 1/4 Green, 1/4 Yellow
Serves: 4

Ingredients:

20oz Lean Ground Turkey
1 Cup Quinoa Rice Blend (or just use quinoa)
3/4 cup Green Peppers, diced
1/4 cup yellow Onion, diced
pinch of Garlic salt
Pepper

Cream of Anything soup

Ingredients:
1 tsp Basil
1 tsp Thyme
1/4c water
1 tsp Onion Powder
3/4c unsweetened Almond milk
Chicken base (this is a paste, you could use Chicken Bouillon)
1-2Tbsp Corn Starch 

Directions

1.  Cook Quinoa/Rice blend separately and place in a container/bowl until just before serving.

2.  Spray a frypan and over med-high heat,  add the Green Peppers, Yellow Onion and garlic salt.
3.  Lightly saute the Green Peppers, and Onion until translucent, about 5 minutes. 
4.  Remove from heat and place in the crock pot.  

5.  If desired, add ground turkey to the frypan and lightly brown. I have found this helps it stay crumbly while in the crock pot. 

6. Turn crock pot on high
7. Place ground turkey in the crock pot, add Cream of Anything soup
8.  Mix until blended and cover.
9.  Cook on high for 2 hours. Add Quinoa/rice blend just before serving.

Cream of Anything Soup Directions:

1. In a sauce pan, start to make the Cream of Anything Soup.
2.  Add the unsweetened Almond milk to a sauce pan or small fry pan
3.  Incorporate the onion powder, basil and Thyme.
4.  Once the liquid is about boiling, add the Chicken base (chicken Bouillon).
5.  In a separate bowl, mix the 1/4c water with corn starch. This will be used as a thickener.
6.  When the mixture boils, whisk in the Corn Starch mixture slowly and stir constantly until incorporated. Mixture should thicken almost immediately.
