This recipe, influenced by SkinnyMs replaces the ham with fresh herbs. In doing so, you have a healthier recipe that is lower in calories and provides a serving of greens - without the fat!
A typical Southern veggie recipe is one where they cook their veggies until they are extremely tender. This recipe does that by cooking them ALL day! Happy Eating!
Southern Style Green Beans
Serves: 6Portions: 1 Green each
Ingredients
- 1 Tbsp Coconut oil
- 1 sm. yellow onion, diced
- 1 tsp basil
- 1 tsp black pepper
- 2 pounds snap green beans, rinsed and strings removed (fresh or frozen...NOT canned!)
- 1 medium sweet potato, diced
- 3 cups vegetable broth (or chicken broth)
- Salt to taste
Directions:
1. In a skillet saute the onion and garlic on medium heat until translucent.
2. Remove from skillet and place in your crock pot.
3. Add the Vegetable broth
4. Add the remaining ingredients except the Green beans and Sweet potato
5. Stir to combine.
6. Add the Green Beans and Sweet potato
7. Cook 6-8 hours. Beans should be about to fall apart when they are finished. This makes them very southern.
