Crockpot Chicken Alfredo
Serves 4Portions: 1 Red, 1 Yellow, 1 Blue, Tsp
Recipe adapted from: disfooddiary.comIngredients:
1.5 pounds chicken breast, cut into cubes2 cloves garlic, minced
1 cup uncooked whole wheat pasta noodles
1-3/4 cups organic chicken broth
1-3/4 cups unsweetened almond milk
2 tablespoons flour
1/2 teaspoon onion powder
1/2 teaspoon dried basil
1/2 teaspoon dried parsley flakes
1 cup parmesan cheese
Salt & pepper
Directions:
1. Cube the chicken breasts and place in a small slowcooker, that is lined or has been sprayed.
2. Cook on high for 2-3 hours or until Chicken is completely done.
3. On the stove top, spray a frying pan and place it on high heat.
4. Add minced garlic and cook for a minute.
3. Add chicken broth, almond milk, flour, onion powder, dried basil, dried parsley flakes and uncooked pasta. Stir well to combine.
5. Bring to a gentle boil, then cover and reduce heat to a simmer.
6. Simmer for 15-20 minutes or until pasta is tender, stirring once or twice during this time.
7. Remove from heat and stir in parmesan cheese.
8. Remove Chicken from Crockpot and add it to the cheesy noodle mixture.
