Pumpkin Spice Oatmeal
You can totally make this on the stove in the morning, but placing it in your crockpot before you go to bed makes for a delightful aroma in the morning when you wake up. Not to mention, the way it warms your soul on these cold fall mornings.
The recipe calls for pumpkin. I personally used my crockpot Pumpkin Puree recipe. Feel free to try that first, or to buy canned from the store. Either way it will be Awesome!

Portions: 1 Yellow, 1/2 Green
Ingredients
- 3 Cups Oats (Regular)
- 15oz pumpkin (or 1 3/4cups)
- 16oz Almond milk
- Enough water to make 8 cups of liquid
- 1 Tbsp vanilla extract
- 2 Tbsp Pumpkin Spice
Directions:
1. Place all ingredients in your crockpot
2. Stir well
3. Set crockpot on Low and cook for 5 hours
4. Serve :)
Leftovers may be stored in the fridge for up to 3 days. Serve drizzled with honey, or feel free to add bananas or other toppings as you desire.
