Chicken and Dumpling Soup



Chicken and Biscuits



This just may seem a little too easy! Especially if you use a can of "Cream of something" soup. 



Serves: 4
Portions: 1 Red, 1/2 Green, 1/2 Yellow
Biscuits(vary, but approx 1 yellow/180 cal biscuit)

Ingredients:

1.5 pounds boneless, skinless chicken (I use breasts)
1 small yellow onion, chopped
1/2 cup mushrooms, chopped finely
1/2 cup celery

8 ounces frozen mixed vegetables (I used a broccoli, cauliflower, green bean mix)

--1 cans cream-of-something soup, 

or I found that you can make your own by combining a saucepan:


2 tablespoon butter

3 tablespoons flour 
1/2 cup milk  
1/2 cup chicken broth
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon poultry seasoning


Biscuits:
--1 can refrigerated biscuits, or one batch homemade drop biscuits using a mix.


Directions: 

Mix the Creamy soup and spices together and dump into the crockpot. Add the frozen vegetables & Chicken

Place on low for 6-8 hours. 


An hour before serving, shred the chicken using two forks and place the biscuits on top.

Cover and cook on high for another hour. The biscuits are done when you can insert a knife and it comes out clean. 


Serve in bowls, with one biscuit per person.
